Pea and Ham Soup

This is so quick and easy to make, and tastes delicious!

You will need:

A big soup pot (Asda, Morrisons, Tesco etc do them for £10)
A hand blender (Asda, Morrisons, Tesco etc do them for £8)
(Once you start making soup regularly these will be totally worth while having.)
If you smoke – thats only 2  1/2 packets of cigarettes, if you drink thats only about 6 pints – so one night in should cover it!!
 
2  or 3 chicken stock cubes (depending on how salty you like it) – £1.25
1 bag frozen petit pois (makes nicer soup than peas) – £1.25 
1 large onion, chopped – approx 20p
1 small packet of bacon, chopped into wee pieces – £1.00
2 teaspoons sugar – negligable cost
add pepper to taste
boiling water
 
Method:
Boil kettle and dissolve the stock cubes in a jug or container
Chop the onion and put it in the soup pot
Empty the whole bag of peas (petit pois) into the pot
Add the dissolved stock cubes to the pot
Add tablespoon of sugar and pepper
Fill the pot with boiling water
Add chopped up bacon
Cook for  15 – 20 minutes
Hand blend the mixture until smooth
Done 🙂
Can add a wee dod of creme fraiche (half fat = 95p) to make it look nice if you like, but not necessary. Serve with Granary Bread – £1.10
 
Cost = £4.80
You should get at least 6-8 bowls our of this depending on the size of the bowl, so thats 60p-80p per bowl.
( You can freeze portions to have another day. Also you will still have stock cubes to make more soup another day and more bread left for another time included in this cost.)
 
 

Tomato and Basil Soup

This is also very quick, easy to make, and really nice.

You will need:

As above, a soup pot and hand blender. (Or you could have it chunky if you don’t have the blender)
 
3 Tins of chopped tomatoes – 99p
1 large onion chopped – 25p
2 or 3 chicken stock cubes depending on how salty you like it – £1.25
2 or 3 garlic cloves chopped very small – 30p
2 teaspoons sugar – negligable
large squirt of tomato puree from a tube (1 tablespoon) – 35p
boiling water
dried basil – 2 tablespoons – 95p
 
Method:
Boil kettle and dissolve the stock cubes in a jug or container
Chop the onion and put it in the soup pot
Empty the 3 tins of chopped tomatoes into the pot
Add the dissolved stock cubes to the pot
Add teaspoons of sugar and pepper, garlic and dried basil
Fill the pot with boiling water
Add good squirt of tomato puree
Cook for  15 – 20 minutes
Hand blend the mixture until smooth (if you have a blender)
Add pepper to taste
Done 🙂

1 large onion chopped – 25p
2 carrots chopped – 14p
1 leek chopped – 25p
1 parsnip chopped – 18p
2 or 3 chicken stock cubes depending on how salty you like it – £1.25
2 or 3 garlic cloves chopped very small – 30p
2 teaspoons sugar – negligable
large squirt of tomato puree from a tube (1 tablespoon) – 35p
boiling water
dried basil – 2 tablespoons – 95p
Handful of pasta -30p
 
Method:
Boil kettle and dissolve the stock cubes in a jug or container
Chop the onion and vegetables and put them in the soup pot
Empty the 2 tins of chopped tomatoes into the pot
Add the dissolved stock cubes to the pot
Add teaspoons of sugar and pepper, garlic and dried basil
Add good squirt of tomato puree
Fill the pot with boiling water
Cook for  15 – 20 minutes
Throw in the pasta once vegetables have cooked, then cook for another 10 minutes.
Add pepper to taste
Done 🙂
 
Cost = £5.77  from scratch including the bread (but if already have stock cubes, tomato puree, basil and bread from before, even cheaper).  Once you have bought the dried basil, and tomato  puree it will last for ages and make many meals.
You should get at least 6 – 8 bowls out of this depending on the size of the bowl, so that’s 72p-96p per bowl.
This is more like a dinner though, with the pasta to fill you up, so a very cost effective and healthy dinner.
